Our Head Chef Michael Spence joined us in late October 2012, originally based in Northampton. Michael has previously worked in many quality hotel establishments then progressing to high end gastro cooking under the guidance of James Nicholas including the Snooty Fox @ Lowick, The Swan @ Lamport and twin sister The Red Lion @ Brafield where he was appointed Head Chef and started to develop his own identity.

My flair and passion for mixing seasonal ingredients are down to having an adventerous imagination when working with food and being self-focused to create exciting menus and dishes for diners to enjoy."
